Versatile Side Salad

This salad was inspired by a trip to Amsterdam I took a few years ago. The food was so simple, yet so delicious! This recipe does justice to a salad I ate in a cute little coffee shop Downtown that I haven't been able to forget since! I hope you all enjoy it as much as I do :)

Versatile Side Salad Recipe:


Yield: 2 Salads

Cook Time: 15 Min

Ingredients:

- 2 Cups Arugula, Washed & Dried

- ¼ Cup Red Onion, Sliced Thinly

- 2 Tbsp Pine Nuts

- 2 Tbsp Sunflower Seeds

- ½ Cup English Cucumber, Diced

- White Balsamic Vinaigrette:

o 1/8 Cup White Balsamic Vinegar

o ¼ tsp Salt

o 1/8 tsp White Pepper

o Pinch Garlic Powder

o ¼ Cup Olive Oil

o ¼ tsp Lemon Juice

Directions:

1. Wash and dry arugula delicately. Cut red onion and English cucumber.

2. To prepare vinaigrette, add vinegar, salt, pepper, garlic powder, and lemon juice to a small bowl. Whisk ingredients together.

3. Slowly drizzle oil into the vinegar mixture, whisking constantly until vinaigrette comes together. (You can also add all the ingredients to a blender and blend for 2-3 minutes for a faster cook time)

4. To build salad, toss arugula with balsamic vinaigrette and top with cucumber and red onion. Sprinkle pine nuts and sunflower seeds over salad and serve, enjoy!

Tips/Tricks:

- When drying the arugula, don’t “scrunch” the lettuce with a paper towel or towel, let it dry on a towel for a few minutes while you prep the rest of your ingredients. This will help your lettuce have more body and crunch!
