Veggie Green's Bowl

Are you getting your greens? This Veggie Green’s Bowl is packed full of B, K, C and A vitamins and nutrients that will help you feel more clarity and feel more energized throughout the day! For those of you who are vegan, try substituting the greek yogurt for coconut milk, I hope you enjoy this recipe :)



Veggie Green's Bowl Recipe:

Yield: 2 Bowls

Cook Time: 30 Min

Ingredients:

- ½ lb Asparagus, Trimmed

- ¾ Cup Brussels Sprouts, Quartered

- 1 ½ Cups Romaine, Chopped

- 1/3 Cup Broccoli Sprouts

- ½ Cup Red Bell Pepper, Chopped

- 2 tsp Salt, Divided

- 3 tsp Pepper, Divided

- 2 Tbsp Olive Oil, Divided

- 1 Tbsp Nutritional Yeast- For Asparagus

- Avocado Whip:

o 1 Avocado, Seed Removed

o 1/8 Cup Cilantro, Chopped

o ½ tsp Salt

o ½ tsp Pepper

o ¼ Cup Olive Oil

o ½ Cup Greek Yogurt

o 1 tsp Lemon Juice

Directions:

1. Wash vegetables and dry them. Preheat oven to 400 degrees.

2. Trim asparagus ends, quarter the brussels sprouts and remove the ends. Then chop the romaine and red bell pepper and set them aside.

3. Toss the brussels sprouts in a medium bowl with 1 tsp olive oil, 1tsp salt, and 1 ½ tsp pepper.

4. Next, toss the asparagus with remaining olive oil, salt, pepper, and nutritional yeast in a separate medium bowl.

5. Place brussels sprouts and asparagus on a sheet tray lined with parchment paper. Place in the oven for 10-13 minutes until roasted.

6. While roasting veggies, prepare the avocado whip. Place avocado, cilantro, salt, pepper, olive oil, Greek yogurt, and lemon juice in a blender or food processor and blend until smooth and creamy.

7. Layer bowl with lettuce, then arrange bell peppers, brussels sprouts and asparagus on top of the lettuce. Place a dollop of avocado whip on top and sprinkle broccoli sprouts on top, if desired. Enjoy!


Tips/Tricks:

- Please make sure to use parchment paper and not wax paper, as wax paper can burn in the oven.

- For a proper roast on the brussels sprouts and asparagus, if you have the time, bake them on separate sheet trays at 400 degrees. Most of the time different vegetables cook at a different pace and this might yield a better result.
