Vegan Veggie Potstickers

These are worth every step to make! (It doesn't take that long, I promise!) Pair with your favorite dipping sauce and fried or steamed rice and you'll have a meal whipped up together in no time!

Vegan Veggie Potstickers Recipe:


Yield: 2 Servings

Cook Time: 35 Min

Ingredients:

- 10 Pot-Sticker Wrappers

- 1 ½ Tbsp Olive Oil

- 1/2 White Onion, Diced

- ½ in. Ginger Root Knob

- ¼ Cup Mushrooms, Diced

- 2 Tbsp Soy Sauce or Tamari

- 1 Large Carrot, Shredded

- ½ Green Cabbage, Thinly Shredded

- 2 Garlic Cloves, Minced

- Fresh Mint Leaves, Minced

- Green Onions, For Garnishing

- *Optional: Orange Dipping Sauce

Directions:

1. Wash vegetables and prepare accordingly. Once vegetables are prepped, set aside.

2. Heat a large skillet over medium heat. Add 1 tbsp olive oil and heat. Next, sauté the white onion for 3-4 minutes, then add the garlic and ginger and cook for 2 minutes longer.

3. Add the soy sauce, mushrooms, carrots, and cabbage to the skillet and cook for another 4-5 minutes. Remove from heat and let cool.

4. To assemble pot-stickers, take one wrapper and add about 1 tbsp of cooked veggie mixture in the center.

5. Fold the edges together and pinch edges 3-4 times to create ‘pleats’ in each pot-sticker.

6. Next, heat a large skillet over medium heat and add ½ tbsp olive oil, heat, and then add pot-stickers. Cook for 2-3 minutes, turning halfway through on each side until lightly browned.

7. Pour 1/8 cup of water or vegetable stock into the skillet and cover with a lid, steaming pot-stickers for 2 minutes. Remove lid and turn heat off. Serve with dipping sauce if desired, enjoy!

Tips/Tricks:

- If the pot-sticker wrapper edges are not sticking well, you can dip your fingers in a small bowl filled with water and seal the edges before crimping them closed to help.

- Add fresh herbs like green onions or parley to garnish.
