Vegan Tikka Masala

Tikka Masala is a traditional Indian dish, this is my Vegan spin-off. Sweet potatoes, chickpeas, and garam masala combine to create this delicious dish!

A quick, tasty, and nutritious meal you can whip up together in no time, enjoy!

Vegan Tikka Masala Recipe:


Yield: 4 Servings

Cook Time: 45 Min

Ingredients:

- 1 Medium Sweet Potato, Cubed

- ½ Yellow Onion, Chopped

- 2 Garlic Cloves, Minced

- 1 (14oz) Can Crushed Tomatoes

- 1 (15oz) Can Chickpeas, Drained

- 1 Tbsp Olive Oil

- 1 Tbsp Garam Masala

- ½ tsp Ground Ginger

- ¼ tsp Ground Cardamom

- ¾ Cup Basmati Rice, Rinsed

- 2 1/2 Cups Vegetable Stock, (1 ½ cup for Rice, 1 cup for Masala)

- 1 tsp Sea Salt

- 1 tsp Black Pepper

- 1 Bunch Cilantro, Chopped

- *Pita Bread or Naan Bread (Optional)

Directions:

1. In a medium pot, add rinsed rice, and 1 ½ cups vegetable stock, cover with lid. Bring to a boil over medium high heat. Lower heat and bring to a simmer, with lid on, and cook for 15-20 minutes or until all the stock is evaporated.

2. While rice is cooking, bring a large pot of water to boil, add sweet potatoes and cook for 15 minutes or until fork tender. Drain water, rinse potatoes with cold water and set aside.

3. Once rice and potatoes are finished, heat a large skillet over medium high heat. Add olive oil.

4. Sauté the onion for five minutes, then add the garlic and crushed tomatoes. Cook for 2-3 minutes.

5. Add the sweet potatoes, remaining 1 cup vegetable stock, chickpeas, garam masala, ginger, cardamom, salt and pepper and continue to cook for 5-6 minutes.

6. Top Tikka Masala with chopped cilantro and pair with fresh pita bread or naan if desired, enjoy!

Tips/Tricks:

- Garam Masala is a blend of Indian spices. If you don’t have access to this spice, you can always add ½ tsp cinnamon, cumin, coriander, cardamom, turmeric and black pepper together to make 3 tsp=1 Tbsp of “garam masala”.
