Who doesn't love chewy, salted caramels? I know I do, and these dairy-free, vegan caramels are super satisfyingly yummy! Sprinkle a lil sea salt on top and you'll be wishing you made a double batch, enjoy!
Vegan Salted Caramels Recipe:
Yield: ~20 Servings
Cook Time: 1Hr 30 Min
Ingredients:
- ½ Cup Raw Sugar
- 3 oz Corn Syrup
- ½ Cup Coconut Cream
- ¼ Cup Coconut Oil or Ghee
- ½ tsp Vanilla Extract
- Sea Salt Flakes for Topping
Directions:
1. Grease a 9x13 in. cake pan or 8x8 in. cake pan with cooking spray or coconut oil.
2. In a large saucepan or pot, add sugar, corn syrup, coconut oil or ghee, and 1/3 of the coconut cream, reserving the rest for later.
3. Bring ingredients to a boil over medium heat, stirring occasionally to prevent sticking/burning. Once boiling, add remaining coconut cream and stir using a whisk. (The mixture may expand/bubble a tad bit during this step, this is normal)
4. Using a candy thermometer or regular thermometer, carefully, bring the caramel mixture to 235F. (This will take some time to reach this temp.)
5. Once caramel reaches 235F, remove from heat, stir in vanilla extract and pour into cake pan.
6. Let cool on the counter for 1 hour or until caramels have set and solidified.
7. Using a spatula, remove the caramel slab from the cake pan and place on wax paper on a cutting board.
8. Cut caramels into squares or rectangles. Top with sea salt flakes if desired, enjoy!
Tips/Tricks:
- Wrap caramels in wax paper to prevent sticking when you store them later on or simply give them as a gift filled inside of a mason jar!
