Vegan Pinwheel Sandwiches Recipe:

Yield: 4 Servings

Cook Time: 25 Min

Ingredients:

- 4 Large Burrito Flour Tortillas (12 Inch)

- 8 oz Plant-Based Cream Cheese (Kite Hill) or Traditional Cream Cheese

- 3 Tbsp Fresh Chives, Chopped

- 2 Tbsp Plant-Based Ranch or Traditional Ranch

- 12 Vegan Turkey Slices or Traditional Slices

- 12 Vegan Cheddar Cheese Slices or Traditional Slices

- 1 Large Globe Tomato, Thinly Sliced

- 8 Butter Leaf Lettuce Pieces

- Garnish: 2 Tbsp Chopped Fresh Parsley

Directions:

1. Gather all ingredients & measure out. Rinse & dry chives, tomato, butter leaf lettuce pieces, and fresh parsley and set aside.

2. First, chop the chives, slice the tomatoes, and chop the parsley and set aside.

3. Next, grab the burrito tortillas and lay four of them out on the counter. Add the chopped chives to a small bowl and add your cream cheese of choice and ranch dressing. Then mix together until smooth and creamy.

4. Spread the herbed cream cheese on the tortillas using a rubber spatula and then layer the rest of the ingredients in the center of the tortilla.

5. Add the turkey slices (3 per tortilla), cheddar cheese slices (3 per tortilla), tomato slices (~3 per tortilla), and 2 butter leaf lettuce pieces per tortilla.

6. Carefully roll the tortilla like a burrito and then cut off the ends and discard. Slice the remaining “burrito” into even sections and then place on a board or platter for serving.

7. Garnish with fresh chopped parsley if you’d like, enjoy!

Tips/Tricks:

- I love making herb cream cheeses because they have much more flavor than just plain cream cheese!

- If you have any other ingredients you’d like to add, like olives, pickles, or even a flavored aioli, feel free to add them to make these sandwiches even tastier! :)

-Try using a serrated knife to easily slice the pinwheel sandwiches into bites.
