Vegan 'Feta' Salad

Vegan 'Feta' Salad Recipe:


Yield: 4 Servings

Cook Time: 15 Min


Ingredients:

- 3 Cups Greens, Washed and Dried Romaine Lettuce

- 1 Cucumber, Cut into Half Moons

- 1 Avocado, Diced

- 1 Red Onion, Thinly Sliced

- 1/2 Cup Feta Cheese (*Vegan: Daiya Cheese)

- 1 tsp Sea Salt

- 1 tsp Black Pepper

Dressing:

- ½ Cup Greek Yogurt (*Vegan: Soya Yogurt)

- 1 Avocado

- ½ Cup Herbs (Cilantro, Parsley, Chives or Green Onions)

- ½ tsp Lemon Juice

- 1-2 Garlic Cloves

- Salt, To Taste

- Pepper, To Taste


Directions:

1. Wash and dry greens. Prepare cucumber, avocado, and shredded carrots.

2. To prepare dressing, add yogurt, avocado, herbs, lemon juice, garlic cloves, salt and pepper in a blender. Blend on high until smooth and thin enough to drizzle.

3. Add water to thin if necessary. Double check to make sure if enough salt and pepper.

4. Finish preparing salad and toss with sea salt, black pepper, and dressing. Top with feta or Daiya cheese.


Tips/Tricks:

- This makes a great lunch for on-the-go and the dressing lasts for 3-4 days if kept in the fridge in an air-tight jar!

- You can customize this salad for your holiday party by adding or removing any ingredients you prefer :)
