Vegan Banana Berry Pancakes 🥞 Everyone loves some comfort food on the weekend and these delicious pancakes were seriously satisfying! Homemade mix with no preservatives or un-natural ingredients, I hope you enjoy!
Vegan Banana Berry Pancakes Recipe:
Yield: 2 Servings
Cook Time: 15 Min
Ingredients:
- 1 1/2 Cups Whole Wheat Flour
- ½ Cup All Purpose, Unbleached Flour
- 2 Tbsp Coconut Sugar
- 2 tsp Baking Soda
- ½ tsp Sea Salt
- 1 tsp Cinnamon
- 1 ½ Cups Almond Milk
- 2 Tbsp Vegetable Oil
- 2 Tbsp Earth Balance
- 1 Banana, Sliced
- 1 Cup Berries- Raspberry & Blueberry or Your Choice :)
Directions:
1. Mix dry ingredients together first. (Flours, sugar, soda, salt, cinnamon).
2. Mix liquid ingredients together next. (Almond milk and vegetable oil),
3. Add the liquid ingredients to the dry and mix using a whisk. Don’t overmix the batter, once it comes together, stop mixing. (This can cause a tougher texture on the pancake if you overmix).
4. Heat a griddle or skillet over medium-high heat and add earth balance as needed throughout making pancakes.
5. Pour batter onto skillet or griddle and cook on each side until they begin to bubble. Flip and cook until browned on each side.
Tips/Tricks:
- You can make a vegan buttermilk using soy milk and lemon juice. That will create more flavor in this pancake as well.
- Flick water on the pan to see if it’s hot enough to pour the batter onto the skillet.
