The best part about this recipe is you know all the ingredients going into the whole process. When you order take-out you never know what company they source their ingredients from or if they are following sanitation protocols. The safest food always comes from home!

The Best Homemade Spinach Artichoke Pizza Recipe:
Yield: 4 Servings
Cook Time: 2 Hr
Ingredients:
- 1 Cup Warm Water
- 1 Tbsp Dry Active Yeast
- 1 Tbsp Granulated Sugar or Sugar In The Raw, Pulverized
- 1 ½ Tbsp Olive Oil
- 2 ½ Cup Whole Wheat Flour or Bread Flour
- 1 tsp Sea Salt
- ½ Cup Ricotta Cheese (Or plant-based alternative)
- 1 Cup Fresh Spinach
- 2 Whole Artichokes or ½ Cup Artichoke Hearts
- Garnish: Parmesan Cheese (Or plant-based alternative) & Fresh Chopped Parsley
Directions:
1. Gather all ingredients & measure out. Rinse & dry fresh spinach, pasley, and artichokes & set aside.
2. First, prepare the dough for the pizza by adding 1 cup warm water, 1 Tbsp dry active yeast, and 1 Tbsp granulated sugar to a large mixing bowl. Let sit for 10 minutes.
3. Once the yeast mixture begins to foam, add the remaining 2 ½ cups whole wheat or bread flour, and 1 tsp of sea salt. Mix using a dough hook attachment or knead by hand.
4. Next, let the dough mix for a total of 5-6 minutes until it becomes shiny and elastic. Gather a large bowl and grease the inside of it using cooking spray or olive oil.
5. Add the dough and turn until it is completely covered in oil and place a damp cloth over the top of the bowl. Let the dough proof for 1 hour, or until it has doubled in size.
6. While the dough is proofing, boil a large pot of water. Slice the ends of the artichokes off, leaving about ½ inch and then cut them in half, lengthwise. Boil the artichokes until they are fork tender at the stem.
7. After the dough has doubled, pour pizza dough out onto a lightly floured surface, and cut the dough into two equal size pieces. Round them out into a ball and the roll out using a rolling pin.
8. Shape the pizza into a circle and make sure the dough is about ¼ inch thick. Spread the ricotta cheese over the dough, leaving ½ inch from the edges. Sprinkle spinach leaves over the top and carefully remove the artichoke hearts from the cooked artichokes and place on top of the pizza.
9. Bake for 20-25 minutes in a pre-heated oven at 400°F or use a pizza oven and cook for 2-3 minutes until the bottom is crispy. Slice into 6-8 pieces & garnish with fresh chopped parsley and parmesan cheese, enjoy! :)
Tips/Tricks:
- I love cooking fresh artichokes, vs. using canned, however if you wish to save time, canned artichokes are also great to utilize :)
- Frozen spinach could also be substituted in this recipe, however, make sure to get as much moisture out of the spinach as you can before baking!
