Tzatziki is a Mediterranean snack or light lunch dip that pairs amazingly well with pita bread or fresh veggies! I love making fresh Tzatziki with English cucumbers and just a teeny bit of fresh dill, enjoy! :)
Tangy Tzatziki w/ Fresh Veggies Recipe:
Yield: 4-6 Servings
Cook Time: 20 Min
Ingredients:
- ½ English Cucumber, Peeled & Grated
- ½ English Cucumber, Sliced
- 1 Carrot, Peeled & Cut into Sticks
- ¾ Tbsp Fresh Dill, Chopped
- 2 Garlic Cloves, Minced
- 1 ½ Cups Greek Yogurt or Soured Coconut Cream
- 2 tsp Salt
- 1 Tbsp Lemon Juice
- 2 Tbsp Olive Oil
Directions:
1. Grate half of English cucumber, add to a small bowl and add salt, stir. Let sit for ten minutes and drain, set aside.
2. In another small bowl, combine the fresh dill, Greek yogurt or coconut cream, minced garlic, salt, lemon juice, and olive oil.
3. Next, Combine the yogurt mixture with the salted, drained cucumber and mix to combine.
4. Peel carrot and cut into sticks and slice remaining half of cucumber, dip veggies into Tzatziki, enjoy!
Tips/Tricks:
- Tzatziki pairs well with pita bread, naan, or fresh veggies. It makes a delicious and satisfying snack or light lunch!
