Who wants to get their brunch on? I know I do. And what brunch isn't complete without mimosas?? These babies are a game changer, the strawberry lemonade is so refreshing and you can never go wrong with some champagne! So raise your glass to brunch and cheers to everyone!
Strawberry Lemonade Mimosas Recipe:
Yield: 2 Mimosas
Cook Time: 5 Min
Ingredients:
- 1/2 Pint Fresh or 1 Cup Frozen Strawberries
- 1 Bottle Moscato or Champagne
- 2 1/2 Cups Water
- ¼ Cup Sugar
- ¾ Cup Fresh Squeezed Lemon Juice
(~8 Large Lemons)
- *Lemon Wedges for Garnish
Directions:
1. Wash lemons and cut in half. Next, juice the lemons.
2. In a pitcher, mix lemon juice, water, and sugar together. Reserve ¼ Cup. Let the rest of the juice sit for a few minutes in the refrigerator.
3. In the meantime, blend strawberries in a blender with ¼ cup lemonade. Puree until smooth. Strain the puree through a fine mesh sieve to remove any chunks or seeds.
4. Add strawberry puree to lemonade and mix. Refrigerate until ready to serve.
5. Once serving, pour lemonade half-way up the glass, saving room to fill the other half with champagne.
6. Serve with a lemon wedge if desired, enjoy!
Tips/Tricks:
- If you feel really fancy, you can use pink Moscato or Champagne for a brighter, tastier drink!
