Skillet Coffee Cake

Coffee cake is a delicious morning treat! This recipe features a generous amount of streusel and cinnamon and pairs perfectly with a fresh cup of coffee, enjoy!

Skillet Coffee Cake Recipe:


Yield: 10 Servings

Cook Time: 30 Min

Ingredients:

- ½ Cup Almond Milk or Milk

- ½ Cup Vegetable or Coconut Oil

- 1 Egg or 1 Egg Replacer or

1 Flax Seed Egg

- ½ tsp Vanilla

- ½ Cup White Sugar

- ¼ tsp Salt

- 1 ½ tsp Baking Powder

- 1 ½ Cups Whole Wheat Flour

- 2 tsp Cinnamon

- ¾ Cup Brown Sugar or Coconut Sugar, Packed

- ¼ Cup Butter or Coconut Oil

Directions:

1. Preheat oven to 350F. Spray a small skillet or 9x13 cake pan with cooking spray.

2. In a large mixing bowl, add almond milk/milk, eggs or egg replacer, vanilla, and vegetable or coconut oil. Set aside.

3. In another bowl, add white sugar, salt, baking powder, and whole wheat flour.

4. Combine the two mixtures together and pour into skillet or cake pan.

5. In a small bowl, combine brown sugar and cinnamon together. Sprinkle over the top of the batter and lightly press on top. Slowly pour melted coconut oil or butter over the top of the cake.

6. Bake in preheated oven for 18-20 minutes or until the top of the coffee cake springs back slightly when you press on top of it.

Tips/Tricks:

- Let cool on top of a cooling rack before serving or cutting. The cake may crumble if it is still slightly warm.
