Raspberry Victorian Cakes

Hello 2023 & Hello Raspberry Victorian Cake!


This cake recipe is super delicious and moist- it reminds me of my wedding cake which is exactly what I was striving for!


I know most people are trying to start diets today, but remember- everything in moderation and you deserve to treat yourself because there are no such thing as "good" & "bad" foods!


There is simply just food, it's the quantity that they're consumed in that can be "good" or "bad".




Raspberry Victorian Cakes:


Yield: 2, 8 Inch Rounds

Cook Time: 1 Hr 30 Min


Ingredients:

- 1 Cup Butter or Earth Balance, Softened

- 1 Cup Granulated Sugar or Sugar in the Raw

- 4 Large Eggs or Bob’s Red Mill Egg Replacer

- 2 Tbsp Whole Milk or Oat Milk

- 2 Cups All Purpose Flour

- 1 Tbsp Baking Powder

- ½ tsp Salt

- 2 Pints Fresh Raspberries, Washed & Dried

- Cream Icing:

o 1 Cup Vegetable Shortening

o 1 Tbsp Vanilla Extract

o 1 Lb Organic Powdered Sugar (*Certain brands are vegan :))

o ½ Tbsp Butter Extract (*Certain brands are vegan :))

o 1 tsp Sea Salt

o 1-2 Tbsp Almond or Soy Milk


Directions:

1. Preheat oven to 350°F. Line 2, 8-inch baking rounds with parchment paper.

2. Gather all ingredients and measure butter and sugar. Place in a medium sized bowl. Cream the butter and sugar together until smooth and creamy.

3. Add the eggs and milk to the bowl and mix together.

4. In a separate bowl, add all-purpose flour, baking powder, and salt. Mix together and then slowly incorporate the dry ingredients into the wet ingredients.

5. Fold the batter together using a rubber spatula and mix until there are no more lumps. Evenly pour the batter into the 8-inch baking rounds.

6. Bake for 25 minutes or until the tops are golden brown. Once cake has cooled, cut in half.

7. While cake is baking, add all icing ingredients together in a bowl. Blend together with a stand or hand mixer until light & fluffy.

8. Layer sliced cake with raspberries and pour cream over the top. Layer with top of cake and repeat process to create a double layer in the cake.

9. Frost the remainder of the cake with leftover icing and top with extra raspberries if you’d like, enjoy! :)


Tips/Tricks:

- If you add an extra egg to the recipe, the cake will be even fluffier in texture.

-You can also bake these in smaller rounds, simply decrease the amount of time you bake them. (You can check for cake doneness by using a toothpick to see if the batter is still wet).
