Pita Sandwiches w/ Sprouts

Are you tired of eating fast food while you're at work or at home? Try these fresh pita sandwiches with sprouts for a change then! These are vegetarian, filled with homemade hummus, and fresh broccoli sprouts. You can find broccoli sprouts at Whole Foods, natural grocers, or even some Kroger stores carry them too! P.S. I have a wonderful hummus recipe under "Vegan Recipes" or you can search for "Hummus" in the search bar; I hope you all enjoy this recipe :)


Pita Sandwiches w/ Sprouts Recipe:


Yield: 2 Sandwiches

Cook Time: 20 Min


Ingredients:

- ½ Cup Hummus

- 1/8 Cup Broccoli Sprouts

- 2 Pita Breads, Folded In Half

- 1/8 Cup Feta Cheese

- ½ Cup Chopped Lettuce or Arugula

- ½ Red Bell Pepper, Sliced

- ½ Zucchini, Sliced

- 2 tsp Salt

- 1 ½ tsp Pepper

- 2 Tbsp Olive Oil

- 1 Tbsp Balsamic Vinegar


Directions:

1. First, preheat oven to 400 degrees.

2. In a large bowl, add red bell pepper and zucchini, toss in salt, pepper, olive oil, and balsamic vinegar; combine together.

3. On a sheet tray, add veggies and roast for about 10-12 minutes until slightly charred. Remove and let cool slightly.

4. To build sandwiches, take a pita bread and cut open or fold in half. Spread the ­hummus on the pitas.

5. Next, layer lettuce, then veggies, feta cheese, and broccoli sprouts, enjoy!


Tips/Tricks:

- Homemade pita bread tastes the best with this recipe. (I have a recipe called “Seriously The Best Pita Bread Ever” if you’d like to try it out) :)

- I like to use leftover hummus as a dip for pretzels, carrot sticks, or veggie chips.
