Pesto Pasta for Two

Pesto Pasta is hands-down the best combination of ingredients in the kitchen! Need a quick dinner idea that also tastes amazing?! Then look no further because this recipe was made for you! In less than thirty minutes you can create this delicious dish at home, I hope you all enjoy! :)



Pesto Pasta for Two Recipe:


Yield: 2 Dishes + Leftovers

Cook Time: 25 Min


Ingredients:

- 1/3 Cup Pesto

- 1 Tbsp Olive Oil

- 1 Lb. Bowtie Pasta

- 1 tsp Sea Salt + 1 Tbsp for Water

- 1 ½ tsp Black Pepper

- 3 Tbsp Parmesan Cheese or “Follow Your Heart Dairy-Free Parmesan”

- Pesto:

o 5-6 oz. basil leaves

o ½ Cup Grated Parmesan Cheese or

“Follow Your Heart Dairy-Free Parmesan”

o ½ Cup Toasted Pine Nuts

o 2 Garlic Cloves

o 1 tsp Salt

o ¼ - 1/2 Cup EVOO

o ½ Cup Chopped Onion


Directions:

1. First prepare the pesto. Blend half the basil with the toasted pine nuts, parmesan cheese, and garlic.

2. Then blend in the rest of the basil.

3. Stream the olive oil into the mixture and blend until smooth and creamy.

4. Add salt and pepper- taste and adjust if necessary.

5. Next, bring a large pot of salted (1 Tbsp) water to a boil. Add pasta and cook according to package instructions.

6. While pasta is cooking, heat olive oil in a skillet over medium high heat. Add onion and cook for 5-6 minutes.

7. Then add the pesto, 1 tsp salt, and black pepper. Cook for an additional 2-3 minutes.

8. Toss the pasta with the pesto mixture and parmesan cheese, enjoy!!


Tips/Tricks:

-Pesto will store for up to 3 days; For best results, place plastic wrap directly on top of pesto to seal any access to air!

-More olive oil = best for soups and pastas

-Less olive oil = better for sandwiches and pizzas
