If you've been following my blog from the beginning, you'll know I get straight to the point and give you the recipe without having to read through my whole life story, right?
Perfect! I'm going to keep doing that, however today I wanted to address why its been almost 9 months since I last posted...
In January 2021, my grandmother passed away. She was a huge supporter of this blog, and for her to no longer like my posts and talk about them with me put me into a deep depression. I avoided blogging all this time and stopped feeling passionate about food.
Today I decided that I choose to be happy and honor her memory with each post I create from now on. Thank you to everyone who has supported this blog and continues to support me on this journey!
Anyways, back to the recipes!
Muddy Buddies are the perfect evening snack or a quick, pick-me-up throughout the day if you're on the go! If you are vegan, "Dandies" makes a great vegan mini marshmallow or you can substitute cashews, walnuts, or dried cranberries instead :) Kids especially love this snack, and if you have a movie night scheduled soon, I highly recommend giving these a try!
Muddy Buddies Recipe:
Yield: 4 Servings
Cook Time: 10 Min
Ingredients:
- 4 Cups Plain Chex Mix
- 2 Cups Pretzels of Choice
- ½ Cup Dark Chocolate Chips (I used Minis)
- ¼ Cup Peanut Butter
- ¾ Cup Powdered Sugar
- ½ Cup Mini Marshmallows
- 2 Tbsp Butter or Earth Balance
- ½ tsp Vanilla Extract
Directions:
1. Gather all ingredients.
2. Combine the peanut butter, butter, and vanilla in a small saucepot and melt.
3. In a large bowl, add Chex mix and pour peanut butter mixture over. Stir to coat and combine Chex.
4. In a large Ziploc bag, add Chex mix mixture and powdered sugar. Seal bag and shake to coat the cereal mixture.
5. Pour into a large bowl and add pretzels, dark chocolate chips, and marshmallows. Stir to combine all ingredients and serve, enjoy!
Tips/Tricks:
- Try serving with hot cocoa or hot apple cider for a fun night-in!
- You can substitute marshmallows with cashews, walnuts, or dried cranberries.
