Mini Pasta Baked Dishes

Need a quick lunch or dinner idea for hosting a small gathering or dinner party? These mini pasta baked dishes are perfect for parties or even just dinner for two! You can easily bake these in individual dishes (creme brûlée ramekins are perfect for this too) and go from oven to serving in no time.

Mini Pasta Baked Dishes Recipe:


Yield: 4 Servings

Cook Time: 35 Min

Ingredients:

- 1 ½ Cups Cavatappi Pasta

- 6 Cups Water, Salted

- 1 Tbsp Olive Oil

- 2 Tbsp Butter or Coconut Oil

- 2 Tbsp Whole Wheat Flour

- 2 Garlic Cloves, Minced

- ½ Cup Chopped White Onion

- ½ Cup Coconut Cream or Heavy Cream

- ½ Cup Grated Parmesan

- ¼ Cup White Cheddar, Shredded

- 1/8 Cup Nutritional Yeast Seasoning (I use Bragg’s, It has a delicate cheese flavor with added protein and fortified with vitamins)

- 2 oz Chopped Parsley

Directions:

1. Preheat oven to 350F.

2. Bring 6 cups of salted water to a boil. Add pasta and cook according to package instructions, removing one or two minutes before fully cooked.

3. Toss pasta with olive oil in a bowl and set aside.

4. Heat a large skillet on medium-high heat. Add butter or coconut oil, let melt. Add flour and cook for one minute. Next, saute onion and then saute garlic.

5. Add coconut cream or heavy cream, parmesan, white cheddar, and nutritional yeast seasoning and bring to a simmer. Cook until sauce thickens enough to coat the back of a metal spoon (Nappe, meaning to coat).

6. Combine the pasta with the sauce and transfer to baking dishes. Bake for 20-25 minutes or until the sauce begins to bubble. Remove from oven and top with extra cheese if desired and parsley. Enjoy!

Tips/Tricks:

- When serving, place baked dishes on a small plate to make carrying easier, plus you won’t burn the table since the plate will protect it from coming into direct contact.
