Mini Cucumber Toasts w/ Sprouts

These are such a simple appetizer to prepare, yet they are extremely tasty!


You can whip these up within 15 minutes and they are perfect for parties, entertaining, or even a tea party if that's your thing!


You can utilize plant-based cream cheese, like Kite Hill, or regular cream cheese, or Neufchâtel cheese which is 1/3 of the calories of traditional cream cheese.

Mini Cucumber Toasts w/ Sprouts Recipe:


Yield: 4 Servings

Cook Time: 15 Min


Ingredients:

- 20 Whole Wheat Mini Toasts (World Market)

- 2 Mini Cucumbers, Sliced Thin

- 8 oz Cream Cheese or Neufchâtel or Plant-Based Cream Cheese (Ex: Kite Hill)

- 1 ½ tsp Sea Salt

- 1 tsp Fresh Cracked Black Pepper

- 1 Tbsp Italian Seasoning

- Garnish: Fresh Cilantro Sprouts or Sprouts of Choice


Directions:

1. Gather all ingredients & measure out. Wash mini cucumbers & sprouts.

2. First, prepare the cream cheese spread by adding 8 oz cream cheese to a mixing bowl, then add sea salt, black pepper, & Italian seasoning and mix until combined and smooth.

3. Next, slice cucumbers and set aside. Unpackage the mini toasts and spread about 1 Tbsp of cream cheese spread onto the toasts.

4. Place cucumbers slices on top and then garnish with fresh cilantro sprouts, enjoy!


Tips/Tricks:

- I love World Market for fun culinary finds like the mini toasts I used in this recipe :)

- If you remember ahead of time, the cream cheese is much easier to whip when it’s at room temperature- simply pull about an hour before you plan to prepare these!
