Mediterranean cuisine is hands-down one of my favorites! This pasta salad is packed full of nutrients, flavor, and the best part... it's SUPER easy to prepare! I like to make a double recipe for lunches to last me through the whole week. I hope you enjoy! :)
Mediterranean Pasta Salad Recipe:
Yield: 4 Servings
Cook Time: 25 Min
Ingredients:
- 1 ½ Cups Cavatappi Pasta
- 2 tsp Olive Oil
- 1 tsp Sea Salt
- ½ Red Onion, Chopped
- ¼ Cup Kalamata Olives, Sliced in Half
- 1/3 English Cucumber, Chopped
- Vinaigrette:
o 1/3 Cup Red Wine Vinegar
o ½ Cup Olive Oil
o 2 tsp Lemon Juice
o 1 ½ tsp Dijon Mustard
o 1 tsp Sea Salt
o 1 tsp Dried Oregano
o 2 Garlic Cloves, Minced
- *Optional- ¼ Cup Feta Cheese or Daiya Cheese for my Vegans :)
Directions:
1. Bring a large pot of water to a boil; add 1 tsp salt to water. Add pasta and cook noodles according to package instructions.
2. Drain, rinse pasta with cold water, and toss pasta with 2 tsp olive oil. Let cool and set aside.
3. Prepare red onion, kalamata olives, and cucumber, set aside.
4. To prepare vinaigrette, whisk together red wine vinegar, lemon juice, Dijon mustard, sea salt, dried oregano, and minced garlic cloves.
5. Next, slowly whisk in the olive oil into the red wine vinegar mixture until combined.
6. Once noodles have cooled, combine the vinaigrette, noodles, cucumber, kalamata olives, red onion, and feta or Daiya cheese if desired, enjoy!
Tips/Tricks:
- Portion salad into containers for easy lunch meal prep throughout the week.
- Add fresh herbs like green onions or parsley to garnish.
