Veggies are awesome and so is seitan, when cooked properly! Seitan is a meat substitute that closely resembles the texture and sometimes the taste of meat! This recipe won't disappoint and if you want to purchase seitan instead of making it at home, I have a recommended product below, enjoy!
Marinated Seitan Veggie Skewers Recipe:
Yield: 2 Servings
Cook Time: 30 Min
Ingredients:
- Seitan:
o 7 oz Vital Wheat Gluten
o 3 oz Canned Chickpeas, Drained
o 2 Tbsp Nutritional Yeast
o ½ Tbsp Dijon Mustard
o ½ tsp Garlic Powder
o ½ tsp Onion Powder
o ½ tsp Oregano
o 1 Tbsp Soy Sauce or Tamari
o ¼ Cup Vegetable Stock
(*Or you can purchase from Whole Foods: Pacific Organic Seitan Original, 12 oz)
- Marinade:
o 1/8 Cup Tamari
o 2 Garlic Cloves, Minced
o ½ tsp White Pepper
o 2 Tbsp Olive Oil
o 1/8 Cup Balsamic Vinegar
o ½ Tbsp Dijon Mustard
- 1 Red Bell Pepper, Cut into 1 in. Pieces
- 1 Small Zucchini, Sliced into ¼ in Slices
- ½ White Onion, Cut into 1 in. Pieces
- Vegetable Oil for Grilling
- 6 Skewers, Soaked in Hot Water for at Least 20 Minutes before grilling
- Fried Rice or Steamed White Rice for Pairing with Skewers
- Teriyaki or Soy Sauce for Dipping
- *Optional: Broccoli Sprouts for Topping
Directions:
1. Soak skewers! Next, to prepare seitan, add the chickpeas, nutritional yeast, Dijon mustard, garlic powder, onion powder, oregano, soy sauce, and vegetable stock into a food processor or blender. Blend until combined.
2. Transfer mixture to a mixer with a dough hook attachment. Starting on low speed, add 1 oz of vital wheat gluten every few seconds, until all 7 oz are added.
3. Continue mixing, increasing the speed to medium and knead for 2-3 minutes until dough begins to develop.
4. After 2-3 minutes, remove from the mixer and let dough rest for a few minutes on a lightly floured cutting board.
5. Flatten into a disk and cut in half. Prepare marinade and let the two seitan ‘steaks’ marinate for about 10-15 minutes. (***You can start at this step if you purchased seitan!)
6. Prepare vegetables for skewers and set aside. Once seitan is finished marinating, cut seitan into cubes and skewer onto skewers.
7. Place seitan, red bell pepper, white onion, and zucchini slices onto skewers until vegetables and seitan are used up.
8. Heat grill over medium-high heat. Brush skewers with vegetable oil and sprinkle with salt and pepper if desired. Grill skewers for 2-3 minutes on each side until grill marks begin to form.
9. Serve with fried or steamed rice and teriyaki or soy sauce for dipping, enjoy!
Tips/Tricks:
- For a more flavorful seitan product, try marinating seitan overnight in a refrigerator.
- Add fresh herbs like green onions or broccoli sprouts to garnish.
