Homemade Vegan Falafels

These are seriously sooo good!!! Dip these babies in some homemade tzatziki for a delicious combo! (Homemade Tzatziki recipe featured on my blog in the search bar) :) These falafels only take 30 minutes to make and you can always skip the shallow frying step if you have an air fryer or would prefer to bake them, enjoy!

Homemade Vegan Falafels Recipe:


Yield: 8 Servings

Cook Time: 30 Min

Ingredients:

- 1/8 Cup + 1 Tbsp Olive Oil

- ½ Cup Chickpeas, Drained & Rinsed

- ¼ Cup Red Onion, Diced

- ¼ Cup Fresh Parsley

- ¼ Cup Fresh Cilantro

- 2 Garlic Cloves

- 1 tsp Sea Salt

- ½ tsp White Pepper

- ¼ tsp Cumin

Directions:

1. In a food processor or blender, combine cumin, white pepper, sea salt, garlic, cilantro, parsley, red onion, chickpeas, and 1 tbsp olive oil until smooth and blended. Set aside.

2. In a large non-stick skillet, add 1/8 cup olive oil. Heat over medium-high heat.

3. Scoop out chickpea mixture and flatten in patties. (I used a 1 oz ice cream scoop for this step).

4. Using a spatula, carefully drop patties into skillet. Let sit for 4-5 minutes before trying to flip or they will crumble.

5. Flip and cook for 2-3 more minutes until slightly golden on the edges. Once finished, place on a paper towel lined plate. Serve with tzatziki or hummus and pita bread, enjoy!
