Sunday mornings are perfect for making homemade, baked goods! One of my favorite childhood treats- The Pop-Tart, inspired this recipe. However, in this recipe I am using all natural products, whole foods, and no preservatives. Bake a large batch on Sunday so you can have breakfast for the whole week without worrying each morning what to eat! I hope you all enjoy! Let me know your thoughts in the comments section :)
Homemade Raspberry Pop-Tarts Recipe:
Yield: 12 Pop-Tarts
Cook Time: 1 Hr 20 Min
Ingredients:
- 2 ½ Cups Whole Wheat Flour
- 1 tsp Sea Salt
- 1 Tbsp Succanat Sugar
- 4 oz Vegetable Shortening
- 4 Tbsp Ice Water
- 6 oz Earth Balance or Coconut Oil or Butter
- ½ Cup Raspberry Jam
- Cold water or Egg Wash: 1 Egg & 1 tsp Cold Water
- Icing:
o 1 ½ Cups Powdered Sugar
o 2-3 Tbs Almond Milk or Regular Milk
o ¾ tsp Cinnamon
Directions:
1. Preheat oven to 375 degrees.
2. Whisk flour, salt, and sugar together in a small bowl. Using a pastry cutter, add shortening and Earth Balance/coconut oil/ butter to flour. Combine until mixture resembles crumbs.
3. Add ice water, mix and form into a flat disk. Cover with plastic wrap. Let rest 20-30 minutes in refrigerator.
4. Remove from fridge and let warm to room temperature for a few minutes.
5. Next, roll out the dough into two large rectangles.
6. Cut into pop tart shapes- you can do round, square, or even rectangular. Egg wash or water wash pop-tart edges and add about 2 tsp of raspberry jam.
7. Place the top layer over the filling and seal the edges using a fork. Egg wash the top if desired, or brush with melted earth balance.
8. Bake for 13-15 minutes at 375°. Prepare icing while pop-tarts are baking.
9. Once cooled, spread icing over pop-tarts and sprinkle with sprinkles or cinnamon. Let harden for 10-15 minutes until you serve or box up, enjoy!
Tips/Tricks:
- After egg washing, you can sprinkle sanding sugar over the top for added crunch and style factor!
- The thinner the dough is rolled out, the faster the dough will bake!
- If you like more jam to crust ratio, add another 1 tsp of raspberry jam.
