Homemade Pierogies & Salad

Have you ever tried a pierogi?


I promise if you love potatoes, you'll love pierogis! They are basically dumplings with mashed potato and cheese inside, then they're boiled and sautéed!


These are super quick to prepare- pair with a fresh salad for a complete healthy meal, I hope you all enjoy! :)





Homemade Pierogies & Salad Recipe:


Yield: 12 Pierogies

Cook Time: 40 Min


Ingredients:

- 2 Cups All-Purpose Flour + Extra

- ½ tsp Salt

- ¼ - ½ Cup Water

- 4 Tbsp Sour Cream or Soured Coconut Cream

- 4 Medium Potatoes, Boiled & Mashed

- 1/3 Cup Cheddar Cheese or Vegan Cheese

- 1/3 Cup White Cheddar Cheese or Vegan Cheese

- 1/3 Cup Gruyere Cheese or Vegan Cheese

- 4 Tbsp Butter or Earth Balance

- 1 Shallot, Minced


Directions:

1. Gather all ingredients & measure out!

2. In a food processor or mixing bowl, add the 2 cups flour, ½ tsp salt, ¼ - ½ cups water, and sour cream. Blend together until the dough forms together into a ball, let the dough rest.

3. In a small pot, add 4 cups of salted water and bring to a boil over high heat.

4. Peel, cube, and boil potatoes in the water until they are fork-tender and then strain out the water. Mash potatoes, add three cheeses, and 2 Tbsp of butter to the potatoes, mix & then set aside.

5. Sprinkle flour over a clean and flat surface. Cut the dough into 6 even pieces, then cut the 6 pieces in half again. Roll each piece into a ball and then roll each ball out into a circle shape. (You can use a rolling pin or a glass bottle).

6. Place 2 tsp of mashed potatoes inside each pierogi and fold in half. Seal the edges using a fork or simply press each edge firmly.

7. Repeat process for each pierogi. Bring a large pot of water to a boil and add pierogies. Boil pierogies for 2 minutes and then strain from the water.

8. Heat a large skillet over high heat and add remaining 2 Tbsp of butter, let melt. Add the shallots and cook for 1 minute. Then add the pierogies and saute until they begin to turn golden brown, enjoy!


Tips/Tricks:

- You can also purchase pierogies from the frozen section of your local grocery store! (Mrs. T’s Pierogies sells my favorites!) :)

- You can double the batch and freeze the extras for an extra meal in the future!
