Homemade Black Bean Sliders Topped w/ Red Pepper Aioli & Crispy Onions

Happy Monday everyone! I decided to do a 'Meatless Monday' recipe for everyone who loves sliders, yet prefers plant-based protein sources. Most black bean patty recipes are dried out and tasteless, giving a bad look to the vegetarian/vegan meat alternatives. However, these homemade patties are deliciously satisfying and pair nicely with a red pepper aioli & crispy onions, enjoy!

Homemade Black Bean Sliders Topped w/ Red Pepper Aioli & Crispy Onions Recipe:


Yield: 8 Sliders

Cook Time: 30 Min

Ingredients:

- 1 Package Hawaiian Slider Buns

- 1/3 Cup Mayonnaise

- 3/4 Red Bell Pepper

- 1 Tbsp Garlic, Minced (For Aioli)

- 1 ½ Cups Arugula

- White Cheddar

- Black & White Sesame Seeds

- Butter

- Black Bean Patty Recipe:

o 1 Can Black Beans (15oz)

o 1 Tbsp Garlic, Minced

o ¼ Red Bell Pepper Diced

o 1/3 Cup Chopped Onion

o 1 Tbsp Cornstarch

o 1 Tbsp Warm Water

Directions:

1. Preheat oven to 350F.

2. Drain and rinse black beans. Mash them in a bowl until they become a paste. Add the onion, garlic, and ¼ red bell pepper. Combine.

3. In another bowl, mix cornstarch, water, sriracha, chili powder, cumin, and salt and pepper and then add to bean mixture.

4. Add the bread and mix, if the “dough” is really sticky, add flour until it begins to look more like a thick, pliable dough.

5. Shape into burger sized or slider sized patties on a sheet tray. Bake for about ten minutes on each side, flipping halfway through.

6. To make aioli, brush remaining ¾ red pepper with some oil and place on a sheet tray and roast while the patties are baking.

7. Once the skin begins to peel, remove from oven.

8. Add mayonnaise, garlic, and cooled red peppers and blend in a blender or food processor. Blend together and season with salt or pepper if desired.

9. To build slider, brush buns with butter and toast them. Then spread some aioli on the bottom of the slider buns. Top with arugula, black bean patty, cheese if desired, and lastly, top buns with some butter and sprinkle sesame seeds on top. Enjoy!

Tips/Tricks:

- To make this recipe completely vegan but with the same great taste, I would replace the butter with Earth Balance and I would replace the mayonnaise with Veganaise (AKA Vegan Mayo).

- Add homemade crispy onions or French’s Fried Onions to make this slider taste even better!
