Healthy Oatmeal Bar Bites

Inspired by my momma’s recipe, these babies are packed full of superfoods! Start your morning off right by prepping these the night before and you've got enough bites to last you each morning all week long! You can shape these into bars, bites, or even cookies if you'd like, enjoy! :)


Healthy Oatmeal Bar Bites Recipe:


Yield: 24 Servings

Cook Time: 30 Min

Ingredients:

- ¾ Cup Vegetable Shortening

- ½ Cup Sucanat Sugar

- 1 Cup Coconut Sugar

- 1 Egg or 1 Egg Replacer

(1 Tbsp Flax Seed Meal + 3 Tbsp Warm Water- Let sit 5 Min.)

- 1 ½ tsp Vanilla Extract

- 3 Cups Rolled Oats

- 1 Cup Whole Wheat Flour

- 1 ½ tsp Sea Salt

- ½ tsp Baking Soda

- 1 tsp Cinnamon

- ¼ Cup Chopped Dried Apricots

- 1/8 Cup Sliced Almonds

Directions:

1. Preheat oven to 350*F. Lightly grease a muffin tin or two w/ cooking spray.

2. In a large bowl or mixing bowl, add shortening, sucanat sugar, and coconut sugar. Cream together for 1-2 minutes until shortening is light and fluffy.

3. Add egg or egg replacer and vanilla to shortening and mix for 1 minute.

4. In another large bowl, combine oats, flour, salt, baking soda, and cinnamon.

5. Add the flour mixture to the shortening mixture and combine until mixed using a spatula. Fold in the chopped apricots.

6. Next, add 1/3 Cup Oatmeal ‘Dough’ into each muffin tin. Lightly press down each top until flattened.

7. Bake bites for 8-10 minutes or until the edges begin to brown. Top each bite with sliced almonds once removed from oven, enjoy!

Tips/Tricks:

- Half-way through cooking, rotate muffin tins for more even baking.

- You can add chopped nuts to the batter before baking for even more protein!
