Green Goddess Crudité Board

Hello There Green Goddess Crudité Board! ☘️


In honor of St. Patrick’s Day yesterday, I prepared this crudité board full of green veggies!


Fresh snap peas, cucumbers, fried green tomatoes, broccoli, celery, and a delicious green goddess dip for everyone to enjoy! :)





Green Goddess Crudité Board Recipe:


Yield: 4 Servings

Cook Time: 30 Min


Ingredients:

- 1 Cup Snap Peas, Trimmed

- 1 Head Fresh Broccoli, Cut into Florets

- 1 English Cucumber, Sliced

- 8 Tomatillos, Sliced for Fried Green Tomatoes

- 3 Celery Stalks, Trimmed

- Green Goddess Dip:

o 2 Avocados, Pit Removed

o 1 Bunch Cilantro, Leaves Trimmed

o 1 Cup Greek Yogurt

o ½ Lemon, Juiced

o ¼ Cup Olive Oil

o 1 tsp Sea Salt

o 1 tsp Fresh Cracked Black Pepper


Directions:

1. Gather all ingredients & measure out. Rinse & dry fresh snap peas, broccoli, cucumber, tomatillos, celery, avocado, cilantro, and lemon & set aside.

2. Next, trim the ends off the snap peas using scissors, cut broccoli into small florets, slice English cucumber into rounds, trim celery stalks, and slice tomatillos if preparing fried green tomatoes. Set all vegetables aside and prepare dip.

3. To make the Green Goddess Dip, scoop out the avocado pulp and place into a blender or food processor. Add the cilantro leaves, 1 cup Greek yogurt, juice half a lemon (make sure the seeds don’t fall in!), add ¼ cup olive oil, and season with 1 tsp sea salt and fresh cracked black pepper.

4. Blend on high until the dip is smooth and creamy. Adjust seasonings if it doesn’t have enough sea salt or black pepper.

5. Add dip into a small bowl and arrange vegetables & dip on a serving board or platter. Refrigerate until serving, enjoy!


Tips/Tricks:

- If you know how to make fried green tomatoes that’s awesome, if not my fried green tomato recipe will be coming out in a few weeks, so make sure to be on the look-out for it- they are super delicious!

- If you would rather use sour cream instead of Greek yogurt, that is 100% okay! Greek yogurt is simply a lower calorie option for anyone looking to lose/watch their weight :)
