French Onion Soup

A soup made from onions does not sound the most appetizing, I know. However, if you have never tried French Onion Soup, you may just be missing out on your next favorite (or only favorite soup) I promise! Pair this delectable dish with a warm baguette and you'll be wishing you found this recipe sooner, enjoy!

French Onion Soup Recipe:


Yield: 2 Servings

Cook Time: 1 Hr

Ingredients:

- 2 Russet Potatoes

- 1 Can (15oz) Black Beans, Rinsed

- 1 Avocado, Diced

- ¼ Cup Sour Cream or Soured Coconut Cream

- 2 Tbsp Butter or Ghee

- 1 Tbsp Chili Powder

- ½ Tbsp Cayenne Pepper

- 2 Garlic Cloves

- 1 tsp Salt

- 1 tsp Pepper

- ½ Yellow or White Onion, Diced

- 1 Tbsp Olive Oil

- Green Onions, Sliced For Garnish

Directions:

1. Preheat oven to 400F.

2. Wash potatoes and pierce with a fork all over potato.

3. Cover potatoes with foil and place in oven. Bake for 50 min to 1 hour until skin can be easily pierced with a fork.

4. Prepare beans while potatoes are baking:

5. In a large skillet, heat olive oil and sauté onions until translucent. Add garlic.

6. Add chili powder, cayenne pepper, salt, pepper and black beans, stir. Cook for five minutes until beans are heated all the way through.

7. To build potato, add butter first, then add beans, avocado, sour cream, and top with green onions.

Tips/Tricks:

- To make this recipe even faster, you can pierce potato with a fork, place in a microwave on a microwave-safe plate and cook for ten minutes on high.
