Double Chocolate Chip Cookies Recipe:
Yield: 12 Cookies
Cook Time: 20 Min
Ingredients:
- ½ Cup Softened Butter or Coconut Oil
- ½ Cup Coconut Sugar or Brown Sugar
- ¼ Cup Succanat or White Sugar
- 1 tsp Vanilla Extract
- 1 Large Egg or 1 Flax Seed Egg
- 1 Cup Flour Whole Wheat or AP
- 3.5 oz Dark Cocoa Powder
- ½ tsp Baking Soda
- ½ tsp Sea Salt
- 3 oz Dark Chocolate Chips
- 3 oz White Chocolate Chips or Macadamia Nuts
Directions:
1. Preheat oven to 350F.
2. Grease cookie sheet w/ cooking spray or line with parchment/silpat.
3. Cream together the butter and sugars by mixing with a paddle attachment or with a spatula. Add vanilla and egg and combine together.
4. In another bowl, add flour, cocoa powder, baking soda, sea salt. Add the butter mixture to the flour mixture and fold in the chocolate chips, both dark and white.
5. Bake on cookie sheet, spreading each one about 2 in apart. Bake cookies for 10-12 minutes. You can tell if they are done by using a spatula to see if the cookie will hold together when you go to pick it up. If it doesn’t hold up, it is not quite done baking, enjoy!
Tips/Tricks:
- If you have the time, refrigerate the dough for thirty minutes before you bake off the cookies. This helps them produce a lighter and softer cookie.
