Cornbread Sugar Cookies w/ Maple Icing

Hello there Cornbread Sugar Cookies w/ Maple Icing!


If you've ever been to Crumbl Cookies, then you might be familiar with a variation of this cookie! I loved it so much that I created my own recipe that tastes very similar if I do say so myself!


Warning, these are seriously addicting... I hope you all enjoy! :)





Cornbread Sugar Cookies w/ Maple Icing Recipe:


Yield: 48 Servings

Cook Time: 1 Hr


Ingredients:

- 2 ½ Cups All Purpose Flour

- 2 ½ Cups Corn Meal, Finely Ground

- 2 tsp Baking Powder

- ½ tsp Baking Soda

- 1 tsp Sea Salt

- 2 Cups Granulated White Sugar or Sugar In The Raw

- 3/4 Cup Butter or Earth Balance

- ¼ Cup Vegetable Shortening

- 1 Egg or 3 Tbsp Apple Sauce

- ½ Cup Sour Cream or Soured Coconut Cream

- 2 tsp Vanilla Extract

- 2 tsp Lemon Juice

- Maple Icing:

o 4 Cups Powdered Sugar

o ¼ tsp Sea Salt

o ¼ tsp Ground Cinnamon

o ¼ Cup Maple Syrup

o 2 Tbsp Water or Half n Half


Directions:

1. Preheat oven to 350° F. Gather all ingredients.

2. In a medium-sized mixing bowl, add the white sugar or sugar in the raw, butter or earth balance & add the vegetable shortening. Cream them together for 2-3 minutes until light and fluffy with a whisk or electric mixer.

3. Add the egg, sour cream, vanilla extract, and lemon juice and combine until mixed together. In a food processor or blender, blend cornmeal on high for 1 minute.

4. In another medium-sized bowl, add all purpose flour, ground corn meal, baking powder, baking soda, and sea salt. Mix together. Slowly add into the egg and butter mixture and combine.

5. Drop cookie dough by rounded 1 Tbsp ice cream scoop for evenly sized cookies on a silpat lined cookie sheet tray or parchment lined sheet tray. (Make sure cookies are 2 inches apart).

6. Bake cookies for 9-10 minutes, rotating halfway through baking. Let cool and make icing while baking cookies in batches.

7. To make icing, combine the powdered sugar, sea salt, ground cinnamon, maple syrup, and half n half/water using a whisk and top cookies once they are cooled off, enjoy! :)


Tips/Tricks:

- You can double the size of the cookie to 2 Tbsp for extra large cookies, just increase the baking time 2-3 minutes and spread the cookies out more.

- You can also make these with a honey butter frosting if you’d like something sweeter!
