Caramel Apple Slices

Caramel Apples are the perfect combination of sweet and tart! This recipe uses red apples instead of green apples for an even sweeter combo! Dip the slices using popsicle sticks or lollipop sticks and you've got yourself a mess free, delicious dessert!

Caramel Apple Slices Recipe:


Yield: 5 Slices

Cook Time: 40 Min

Ingredients:

- 1 Apple, Sliced ¼ in Thick

- ½ Cup Sugar

- 1/3 Cup Corn Syrup

- 1/8 Cup Earth Balance or Coconut Oil

- *1/4 tsp Butter Extract (Vegan, but Optional)

- ¼ tsp Vanilla Extract

- ½ Cup Coconut Cream, Divided In Half

- Gold Sprinkles

- Popsicle or Lollipop Sticks

Directions:

1. In a large saucepot or Dutch oven, combine the sugar, half the coconut cream, corn syrup, earth balance or coconut oil and sugar to a boil over medium-high heat.

2. Stir continuously, using a whisk as mixture bubbles, and add the remaining coconut cream.

3. Continue stirring occasionally until mixture reaches 235F. (You can use a candy thermometer or a regular thermometer to check the temperature).

4. Once it hits about 235F, remove the caramel from the heat and stir in the vanilla and butter extracts.

5. Wash and slice apple into rounds, ¼ thick and dry with paper towels.

6. Insert a popsicle or lollipop stick into the bottom of each slice. Carefully dip the apples into the caramel mixture. (It’s okay if only one side becomes coated, simply spray the uncoated side with some lemon juice mixed with water right before serving, so they won’t turn brown).

7. Place dipped caramel apples on parchment paper or on a Silpat. Sprinkle with sprinkles and let set for 10-15 minutes until you serve them, enjoy!

Tips/Tricks:

- Don’t want to try plant-based caramels? You can always substitute the earth balance for real butter, coconut cream for heavy cream, and you wouldn’t need the butter extract for additional flavor, in this case!
