Bright Berry Salad w/ Candied Walnuts

I've been missing the warmer weather lately, so this Bright Berry Salad with Candied Walnuts is giving me life! While some people think salad is considered "rabbit food", I think this recipe will change those people's minds forever! Full of delicious berries, walnuts & almonds, and a yummy homemade dressing, what could go wrong? I hope you enjoy :)



Bright Berry Salad w/ Candied Walnuts Recipe:


Yield: 2 Salads

Cook Time: 15 Min


Ingredients:

- 2 Cups Mixed Greens

- 1 Cup Chopped Kale

- ¼ Cup Candied Walnuts

- ¾ Cup Sliced Strawberries

- 1/8 Cup Sliced or Slivered Almonds

- White Balsamic Dressing:

o ½ Cup Olive Oil

o 1 tsp Black Pepper

o 1 tsp Sea Salt

o 1 ½ tsp Sugar or Agave

o 2 oz White Balsamic Vinaigrette

o 1 Tbsp Dijon Mustard


Directions:

1. Wash and dry the mixed greens and kale. Chop the kale and set aside.

2. Prepare the dressing by adding all ingredients to a blender or immersion blender and blitz until smooth and creamy, about 2 minutes.

3. In a salad bowl, add the mixed greens and kale and toss with the dressing.

4. Next, add the almonds, candied walnuts and sliced strawberries. Serve on a plate or bowl, enjoy!


Tips/Tricks:

-Prepare ahead the night before and set the dressing aside so you have an on-the-go salad at hand!

-To candy your own walnuts, combine ¼ cup brown sugar with 1 Tbsp Butter or Vegan Butter in a small skillet and add walnuts once the mixture becomes sticky!
