Tired of the same-old breakfast day in and out?
Switch things up a bit with some tasty breakfast tacos! Pair them with your favorite salsa for a delicious twist on the traditional taco eaten typically only at lunch or dinner :)
Packed full of protein & flavor, these have become my new favorite breakfast dish that I can whip up in less than 30 minutes, I hope you all enjoy!
Breakfast Tacos Recipe:
Yield: 2 Servings
Cook Time: 25 Min
Ingredients:
- 6 Street Taco Flour Tortillas
- 4 Large Eggs or Egg Replacer (Just Egg)
- 2 Tbsp Whole Milk or Plant Based Milk
- 2 Tbsp Butter
- Orange Bell Pepper, Diced
- Yellow Onion, Diced
- Cilantro, Chopped Fine
- 1 Avocado, Diced
- 1/3 Cup Pecorino Cheese or Daiya Cheese, Shredded
- Salsa of Choice
Directions:
1. Gather all ingredients. Wash produce- (bell peppers, cilantro, avocado). Prep the produce by dicing the pepper, onion, and avocado. Mince the cilantro.
2. In a large skillet, heat tortillas over medium high heat. Set aside or place in a tortilla warmer. Crack eggs into a medium bowl and add milk. Stir together.
3. Melt butter in large skillet. Add the bell pepper and yellow onion. Sauté for 2-3 minutes until the onions become translucent. Pour in the egg mixture and cook thoroughly, making sure to stir occasionally.
4. Transfer the scrambled eggs onto the tortillas and top with avocado, pecorino, and cilantro. Pair with your favorite salsa, enjoy!
Tips/Tricks:
- You can easily make these into burritos if you need breakfast on-the-go!
- You can also fry the tortillas for crispy breakfast tostadas :)
