Blueberry Grilled 'Cheese'

I've been on a breakfast kick lately, and these blueberry grilled 'cheese' b-fast sandwiches are seriously so quick and delicious, you'll wish you found this recipe sooner! They take less than ten minutes to make and are a tasty, healthy, running late kind of a breakfast creation! I hope you all enjoy :)



Blueberry Grilled 'Cheese' Sandwiches Recipe:


Yield: 2 Sandwiches

Cook Time: 10 Min

Ingredients:

- ½ Pint Fresh Blueberries

- 4 oz Vegan Cream Cheese (Miyoko’s Vegan Cream Cheese)

- 2 Tbsp Powdered Coconut Sugar

- 4 Slices Wheat Bread

- 2 Tbsp Vegan Butter (Earth Balance)

Directions:

1. First, heat a skillet or panini press.

2. Mix cream cheese with powdered coconut sugar.

3. Butter two slices of bread, only on one side.

4. Place the buttered side facing down on the skillet or press and spread cream cheese mixture and place ½ the blueberries onto each one.

5. Butter the other two slices of bread and place the non-buttered side on top of blueberries.

6. Close lid on panini press and grill for 1-2 minutes or cook sandwich on a skillet until the bread begins to brown slightly, then flip over and repeat.

7. Cut in half and you’re all set, enjoy!

Tips/Tricks:

- You can also try experimenting with cashew cheese, almond cheese, or even peanut butter for this recipe!

- For best results, a panini press is the quickest way to make these sandwiches!
