I got to have a lazy weekend! And what better way to spend the weekend at home than by making some homemade banana bread muffins! These babies are vegan, delicious, and nutrient-dense! Bananas are sometimes difficult for some people to eat because of the texture, so making muffins with them is a great way to still get those nutrients, like potassium, without actually having to eat the whole fruit! I hope you enjoy :)
Banana Bread Muffins Recipe:
Yield: 6 Large Muffins or 12 Regular
Cook Time: 40 Min
Ingredients:
- 2 Cups Flour
- 1 Cup Sugar of Choice
- 1 tsp Baking Soda
- ½ tsp Salt
- 2 Eggs or Egg Replacer
- ½ Cup Vegan Butter, Melted
- 5 Tbsp Vegan Sour Cream
- 3 Ripe Bananas, Mashed
- *Optional: 1 Cup Chopped Walnuts or Pecans or Mini Chocolate Chips
Directions:
1. Preheat oven to 350 degrees.
2. First, combine the flour, sugar, baking soda, and salt in a medium bowl.
3. In a separate medium bowl, mix the eggs or replacer together. Add the butter, sour cream, bananas. Stir to combine.
4. Add the liquid mixture to the dry mixture and mix using a whisk until the mixture is combined. (Make sure not to overmix the batter!)
5. Fold in the chopped nuts or chocolate chips if desired and pour batter in muffin tins lined with liners or silicon muffin tins.
6. Bake in the oven for 10-12 minutes for regular-sized muffins or 14-16 minutes for large muffins. Let cool before eating, enjoy!
Tips/Tricks:
-Muffins are finished once they begin to turn golden brown and no longer jiggle when you shake the muffin tin.
