Baby Belgian Waffles w/ Fresh Cream

Today on the blog, I decided to make mini waffles! I love miniature versions of normal-sized things and these Baby Belgian waffles are too adorable not to make. I used a mini waffle iron to make these babies and topped them off with some fresh homemade whipped cream! Mmmm sooo good, I highly recommend making these even if you don't have a mini waffle iron, a normal waffle iron will make them just as well, enjoy!

Baby Belgian Waffles w/ Fresh Cream Recipe:

Yield: 8 Mini Waffles or 4 Regular Waffles

Cook Time: 15 Min

Ingredients:

- 1 ¼ Cup Whole Wheat Flour

- ½ Tbsp Baking Powder

- 1 ½ Tbsp Coconut Sugar

- ½ tsp Salt

- 1 tsp Vanilla

- ½ tsp Cinnamon

- 1 Cup Almond Milk

- ¼ Cup Vegetable Oil

- 1 Large Egg, Separated

Directions:

1. In a large bowl, combine flour, baking powder, sugar, salt, and cinnamon.

2. In a small bowl or mixer, whip egg white until it is white, fluffy, and stiff peaks form on the whisk.

3. In third bowl, combine egg yolk, oil, milk, and vanilla together.

4. Add the egg yolk, oil, milk, and vanilla bowl to the dry goods. Once combined, gently fold in the egg white and set aside.

5. Heat waffle iron and spray with cooking spray.

6. For mini waffles, spoon about ¼ cup batter in mini waffle iron. For regular waffles, spoon about ½ cup batter in waffle iron. Cook until golden brown.

7. Serve with fresh cream, berries, honey or agave, maple syrup, etc.

Tips/Tricks:

- If you place cooked waffles on a cookie sheet after cooking, the waffles will crisp up better, than if you stack them on top of each other.
